Description: | While Britain's 19th-century aristocracy favoured the more expensive white bread, members of the military forces were advised to eat wholemeal bread, as this was seen as a healthier option.
The invention of the steam engine had transformed the production of flour: roller mills were built that used steam-powered steel wheels, greatly improving productivity. The availability of cheap grain from America also helped to reduce the cost of bread, bringing it within the budget of all but the poorest members of society.
