Description: | Signed: yes Description: In Paris, during the 19th century, the role and status of the professional cook changed. In the many new restaurants that opened after 1850 the traditional buffet or large-platter service was replaced by waiters serving each diner an individual portion. In addition the type of food served and the methods of preparation also changed to meet the needs of the middle class clients who were now dining out. Ribot recognised that the subject of cooks could justifiably be seen as an important theme of contemporary life. But instead of painting the portraits of the famous chefs of the day he chose, as here, to depict the kitchen process itself.
